On a break + schedule for October classes

Sooo this post is 2 weeks late. If you’ve tried to reach me by text, call, or email, apologies for my tardiness in replying as I’m on vacation busy getting lost in marketplaces and centuries-old towns…

By the way, MAKATI CLASSES ON WEEKENDS! Yes. Stay tuned, they are in the works, and I am as excited as you are.

We’ve got 3 classes in Alabang lined up for October! Here’s a quick summary:

15th, Wednesday – Vegan cookies 2.0 (new class!)

22nd, Wednesday – Perfection achieved by way of pizza

29th, Wednesday – Sell your soul for vegan sausages

15th, Wednesday – DESSERT MAYHEM: VEGAN COOKIES 2.0, 10am to 2pm

Learn how to bake dairy-free and egg-free versions of popular cookies in this NEW class! Get familiar with using healthier alternatives to white flour and white sugar as well as plant-based alternatives to butter and eggs.

Are vegan cookies any good? I’ve been vegan for more than 6 years and feeding dairy-eaters my cookies – yes, yes my vegan cookies bring all the boys to the yard. You won’t know the difference and they’re cholesterol-free, too. We end class with a healthy, homemade lunch.

On the menu:

Crunchy peanut butter oatmeal cookies

Classic sugar cookies

Snickerdoodles

Sparkling gingerbread cookies

23rd, Wednesday – PERFECTION ACHIEVED BY WAY OF PIZZA (gluten-free options available), 10am to 2:30pm

Who doesn’t love pizza? Yes, herbivores don’t just drink green juice and eat salad all day. We like to let our hair down and occasionally nosh on one of Italy’s food legacies. For those who forsake dairy, ordering a cheeseless pizza may seem more of a chore than a treat.

Why pay someone to make you a tolerable vegetable pizza when you can make one (or 8) yourself that you will actually want to devour?

Come to this class and I promise, you won’t find better pizzas around. To the herbivores out there, you don’t want to miss this. And if you’re a meat eater? It’ll be an enlightening experience for you, too.

Learn how to knead whole wheat and gluten-free pizza doughs from scratch as well as:

3 sauces – marinara, smoky barbecue, and dairy-free garlic cream

2 dairy-free cheeses – soy and nut

(if you’re allergic to nuts, we’ve got a solution for that! Mention you’re nut-free when you register)

At the end of class we will make 8 awesome pizza flavours:

margherita, bianca, truffle potato, truffle mushroom,

garden barbecue, roman eggplant, pizza con zucca, sky’s the limit

This is a pretty popular class and in the end of class, you will leave completely stuffed!!!

29th, Wednesday – SELL YOUR SOUL FOR VEGAN SAUSAGES, 10am to 2pm

Learn how to make all-natural vegetarian sausages from scratch. No preservatives, no fakey fakes, no cholesterol – just real, plant-based ingredients and big on flavor. Low fat, too, I might add. You’ll learn how to pair herbs and spices together to create flavours like chorizo, pepperoni, and Italian sausage (among others), and then turn these sausages into scrumptious savoury dishes.

On the menu:

Sausage and mushroom stuffed peppers

Sausage and vegetable pot pies

Spaghetti with sausage and tomato cream sauce

July classes in Makati + sad announcement

Hello folks, more fantastic classes are coming up this month! If you’re interested in classes in Alabang, do check out the schedule here.

But before everything else, I want to inform you all that this will probably be the last month I’ll be holding classes in my Salcedo Village kitchen.

It’s been a really rockin’ 8 months spreading the veg gospel in the city; I loved connecting with everyone who’s come by and listening to how the classes helped people take care of their and their loved ones’ health truly makes me feel all warm and fuzzy inside. Unfortunately my Makati kitchen space will be heading to greener pastures BUT I will definitely still hold classes in my Alabang kitchen.

The hunt is still on for a northern kitchen space, though! So, stay tuned.

Salads are nutrient-dense, immunity-boosting, and cooling to the body. There are terrible salads out there (I’m talking about limp leaves with a side of vinegar some restaurants like to sell for P400) but the salad of your dreams – the kind that you’ll look forward to eating – is easy and doable. In this class, learn how to make 4 beautiful salads that will knock your socks and tastebuds off. You’ll get familiar with different vegetables, fruit, grains, beans, herbs, spices, and seeds that you can use to compose future dreamy salads.

Vegan Caesar salad with garlic croutons and almond parmesan

Dill potato salad with homemade egg-free mayonnaise

Roasted vegetable and quinoa salad

Soba noodle salad with baked tofu and miso-sesame dressing

12th, Saturday – DESSERT MAYHEM: CREAMY, DREAMY DESSERTS, 2:30pm to 6pm (gluten-free options available)

Eschewing dairy products from your diet DOES NOT mean you have to give up on creamy, luscious desserts. On the contrary, there are plenty of plant-based ingredients that can give dairy-based butter, milk, cream, and cheese a run for their money!

In this class, you’ll learn how to  create creamy sweet treats without the cow juice. We’ll also be using alternative, low-glycemic sweeteners instead of white sugar poison because I love you and don’t want your blood sugar levels to go haywire.

On the menu:

Mango crepe with homemade vanilla ice cream

Cashew cheesecake

Banana trifle

Panna cotta with berry coulis

Quinoa is a wholegrain that’s high in protein and fiber, low on starch, and uber-versatile. It’s an easy substitute for rice but if you want to learn more creative ways with this wonder grain, then check out this class!

On the menu:

Rainbow vegetable quinoa salad

Moroccan stuffed peppers

Quinoa vegetable lasagna

Black bean and quinoa croquettes with avocado sauce (when avocados are out of season, we sub with garlic cashew aioli)

Exciting times ahead in February!

Cook timeless PASTA favorites with a healthy, plant-based twist on the 8th, Sunday (Makati). Learn how to make gluten-free ravioli from scratch!

Compose creative and colorful SALADS that want to be eaten on the 8th, Saturday (Alabang).

The ever popular PIZZA class comes back on the 12th, Wednesday (Alabang), both with whole wheat and gluten-free variations.

The MEDITERRANEAN is known for its naturally healthful yet flavorful dishes – discover how to make them on the 15th, Saturday (Makati).

Recreating THAI cuisine may seem complicated but it is actually quite simple once you familiarize yourself with its key ingredients. And making traditional dishes with a vegan twist is doable and delicious! Learn how to on the 16th, Sunday (Makati).

GLUTEN-FREE VEGAN SAUSAGES — an impossible dream? They certainly are not! In this class, learn a master sausage recipe using vegan, gluten-free ingredients and how to flavor them in multiple ways. We will turn the sausages into 3 dishes. This is happening on the 19th, Wednesday (Alabang).

And lastly, make vegetarian sushi that doesn’t suck (and isn’t composed solely of cucumber), plus other delicious things like miso-glazed vegetables and an enoki mushroom sauce poured over tofu in A TASTE OF JAPAN on the 26th, Wednesday (Alabang).

In the kitchen: Save your soul with vegan sausages

Another overdue post on class photos!

“Save your soul with vegan sausages” class was held on the 8th of October, 2011. In this class, students learned how to make all-natural vegetarian sausages from scratch. No preservatives, no fakey fakes, no cholesterol – just real ingredients and big on flavor. Low fat, too, I might add.

No photos of the actual sausage making, unfortunately, but let me tempt you with the finish dishes the sausages went into. Vegan!

Oh, and did I mention? Raya Mananquil stopped by for some vegan sausage education!

Raya actually figures quite importantly in my becoming vegetarian – an article she wrote on vegetarianism for the Philippine Star in September 2007 encouraged me to do more research on food politics, watch undercover factory farm videos, and make the switch. Me teaching her was very surreal, especially since October 8 was my 4 year vegetarian anniversary.
