Pasta is a staple in Italian cuisine because it cooks quickly and fills up your appetite quite nicely. But most pasta noodles are made with refined flour (which can spike blood sugar levels) and their sauces can be quite rich and unhealthy. In PASTA PARTICIPLE 2.0 class, discover how to make healthified dairy-free versions of pasta favourites without sacrificing flavour, using vegetables, legumes, nuts, and herbs.

WHEN: November 5, Sunday, 2:00-6:30pm

Who doesn’t love pizza? A healthy diet isn’t drinking green juice and eating salad all day. Guilt-free pizza is definitely achievable in your own kitchen – why pay someone to make you a tolerable vegetable pizza when you can make one (or 9!) yourself that you will actually want to devour? Come to this class and I promise, you won’t find better pizzas around.

Learn how to knead whole wheat pizza dough from scratch as well as:

3 sauces – marinara, smoky barbecue, and dairy-free garlic cream
2 dairy-free cheeses – soy and cashew

At the end of class we will make AT LEAST 9 awesome pizza flavours:

margherita, Italian veggie sausage, garden of Eden, alfalfa and arugula

Bring out your maracas and bandaritas in this fun cooking class! Learn how to make a slew of Mexican dishes for the ultimate vegan party. We’ll make a bunch of stuffings and condiments from scratch, you won’t know what hit you!

MUSHROOM COOKERY 2.0

WHEN: November 12, Sunday, 2:00-5:30pm

In this class, you’ll learn how to cook healthy, mushroom-based, vegetarian versions of well-loved dishes. Mushrooms are actually a fungi – not a vegetable – and known as the “meat” of the vegetarian world. Not only are they delicious, mushrooms are high in protein, iron, and B vitamins, low in calories, actually help lower cholesterol, and eliminate toxins from the body. They are a rich source of glutamic acid (natural MSG) and so enhance the flavour of any savoury food.

Giving up dairy doesn’t mean giving up on cheese! In this class, learn how to make luxurious and creamy cheesecakes using nuts, wholegrains, alternative sweeteners, and healthy fats. We will be making 4 different crusts as well. You won’t believe it’s dairy-free!

Chickpea flour is a high-protein and gluten-free flour made from ground dried chickpeas or garbanzo beans. While a staple in Indian, Pakistani, and Bangladeshi cuisines, this flour can actually be used in a number of dishes – proving it to be a useful ingredient to have in your pantry. In this class, learn how to incorporate nutrient-dense chickpea flour in your everyday cooking and baking.

COOKING WITH SEITAN

WHEN: May 20, Saturday, 9:30am-1:30pm

Learn how to make seitan from scratch and use it in flavorful dishes! Seitan is a vegetarian meat substitute made from gluten (wheat protein). It has a chewy texture quite reminiscent of meat without the cruelty and the cholesterol. If you have difficulty going vegan or cutting out meat because you love the taste of it or if you’re a vegetarian who wants to expand his or her cooking knowledge, this class is for you.

Kids’ summer cooking classes 2017 (in Alabang)

Hello folks! Summer is kicking off which means kids are spending days at home glued to Netflix or iPads (or both!). Get them off social media and digital screens and into the kitchen learning important and useful life skills.

If you want your kids to learn how to chop, prepare and cook vegetables, and eat nutrient-dense meals, these are the classes for them.

DETAILS IN A GLANCE:

  • 6 weeks of classes, from April 19 to May 25
  • Wednesdays (savory food) and Thursdays (desserts) only, 10am to 2pm. 12 classes in total!
  • Age limit: 8 to 14 year olds
  • Savory Wednesdays: pasta, sushi, veggie burgers, Filipino / Pinoy food, pizza, fancy pants food
  • Sweet Thursdays: cookies, saucy desserts, fruity desserts, chocolate desserts, cupcakes, breakfast desserts
  • On Thursdays the kids and I cook and eat a nourishing vegetarian lunch. Vegetables are always included.
  • Pricing: ranges from  P1,150 per class to P1,600 per class. For example, if you sign your child up for 10-12 classes, the rate is P1,150 per class. If you sign your kid up for only 1-3 classes, the rate is P1,600 per class.
  • Discounts available for siblings! Please fill out the registration form twice and we will let you know about discounts through email.
  • Advanced payment is required through BPI bank deposit, PayPal (additional fees apply) and credit card (additional fees apply). You’re welcome to sign up and pay for 1 class first to see if your kid will like it then later on sign up and pay for the other classes.
  • Classes are hands-on and everything made in class is vegetarian / vegan (no dairy or eggs)
  • Sign up for 1, 3, 7, or all!

The workspace is air-conditioned so the kids can learn in a comfortable environment. Classes are held in a private residence in Ayala Alabang. For our privacy and to protect the kids, we do not disclose the address unless you sign up.

We often get shy kids that come out of their shell in our classes. They make new friends and leave the bubbliest!

We have one class scheduled for adults in Alabang happening on April 5, Wednesday. After this class, adult classes are on break for the rest of the summer as we focus on kids’ summer classes. Regular class schedules resume in June.
