Salads are nutrient-dense, immunity-boosting, and cooling to the body. There are terrible salads out there (I’m talking about limp leaves with a side of vinegar some restaurants like to sell for P400) but the salad of your dreams – the kind that you’ll look forward to eating – is easy and doable. In FANTASTIC SALADS 2.0 class, learn how to make 4 beautiful salads that will knock your socks and tastebuds off. You’ll get familiar with different vegetables, fruit, grains, beans, herbs, spices, and seeds that you can use to compose the salads of your dreams.

On the menu:

Vegan Caesar salad with garlic croutons and nut parmesan

Dill potato salad with homemade egg-free mayonnaise

Mexican-spiced vegetable, black bean, and quinoa salad

Soba noodle salad with baked tofu and miso-sesame dressing

RATE: P1850 if prepaid by February 2 Monday, P2150 after February 2 Monday  (prepaying details here).

pasta 012615

Pasta is a staple in Italian cuisine because it cooks quickly and fills up your appetite quite nicely. But most pasta noodles are made with refined flour (which can spike blood sugar levels) and their sauces can be quite rich and unhealthy. In PASTA PARTICIPLE 1.0 class, discover how to make healthified versions of pasta favourites without sacrificing flavour, using vegetables, legumes, nuts, and herbs. This class is gluten-free friendly!

On the menu:

Broccoli mac and cheese

Sicilian-style spaghetti with pan roasted cauliflower and almonds

Spinach and cheese cannelloni

Fettucini with roasted eggplant and zucchini

RATE: P1850 if prepaid by February 9 Monday, P2150 after February 9  (prepaying details here)

mushroom cookery 012615

Mushrooms are actually a fungi – not a vegetable – and known as the “meat” of the vegetarian world. Not only are they delicious, mushrooms are high in protein, iron, and B vitamins, low in calories, actually help lower cholesterol, and eliminate toxins from the body. They are a rich source of glutamic acid (natural MSG) and so enhance the flavour of any savoury food.

In MUSHROOM COOKERY 1.0, learn how to cook healthy, mushroom-based, vegetarian versions of well-loved dishes. All recipes will be dairy-free and egg-free as well (gluten-free options are available, please inquire upon sign up). The class is hands-on – just bring an apron and containers for leftovers.

On the menu:

Enoki mushroom and soba noodle soup

Mushrooms al ajillo

Savory mushroom crepes with shiitake cream

Mushroom patties with mashed potato and gravy

RATE: P1850 if prepaid by June 28 Monday, P2150 after June 28 Monday (prepaying details here)
