October schedule of classes

We’ve got an action-packed schedule of classes for this special month!

Experience plant-based Japanese and Vietnamese cuisines at their finest on the 6th, Saturday and 10th, Wednesday.

Learn creative ways to cook quinoa, a superfood grain from South America on the 18th, Thursday.

Beat inflammation (and even reverse it) through food on the 23rd, Tuesday.

Chocolate gets the royal treatment on the 24th, Wednesday.

Go gaga over shrooms (and learn why they are sooo good for us) on the 27th, Saturday.

And finally, get bodaciously barbecued on the 31st, Wednesday.

*Watch out for a special cancer-fighting cooking demonstration and benefit dinner in Edgy Veggy Cafe in Pasig on the 16th, Tuesday, in partnership with Edgy Veggy, I Can Serve Foundation, and Ministry of Mushrooms‘s Shrooms Go Pink breast cancer awareness project.

**Also watch out for a benefit brunch for PAWS‘ special needs animals in Alabang on the 20th, Saturday.

Always a pleasure to share creative ways in preparing fresh vegetable-based dishes!

Fabulous sandwiches – no meat but with tons of flavor.

In the kitchen: June classes

Some photos of dishes cooked up in class last month. All in Alabang!

Bodacious veggie burgers

This one’s made of kidney beans with avocado, cucumbers, sprouts, housemade ketchup, and vegan cream cheese.

We made a total of 4 kinds of burgers: bean, tofu, mushroom, and seitan / gluten. We also made these sauces from scratch: barbecue sauce, ketchup (no artificial food coloring or preservatives!), egg-free mayo, and dairy-free cream cheese. Large colorful salad with miso sesame dressing too so we wouldn’t get too carbed out.

April schedule of cooking classes (for grown-ups)

Three awesome classes coming up next month, all on Wednesdays!

Fantastic salads 3.0 gives love to vegetables and showcases cooling foods which are perfect for the upcoming warm weather.

And again, when the tropical summer weather gets harsh, it’s practically a crime to crank up the oven to make dessert and turn your kitchen into a sauna. In Dessert mayhem: Get un-baked, you will create luscious desserts while keeping the heating to a bare minimum.

March cooking classes

Moving forward from action-packed January and February, I present to you the schedule for March cooking classes!

Learn how to compose stunningly delicious sandwiches in Shack of vegan sandwiches (3rd, Saturday).

Pair up your new knowledge of sandwiches with Soups to make you sing (7th, Wednesday).

If you often crave sweet brunch-y type meals then perhaps No muss, no fuss (sweet) brunch 3.0 is your cup of tea (10th, Saturday).

Get your sexy on with Dessert mayhem: sexy low-fat desserts (14th, Wednesday).

We take a two week break and proceed with rusticity in A taste of the Mediterranean (28th, Wednesday).

February cooking classes

Continue making 2012 the year of tastefully taking care of health. Get schooled in more vegetable cookery this February. Also: Makati, I’m coming your way this month with a green juice and smoothie workshop. Watch out!

Learn how to make classy appetizers in Much ado about hors d’oeuvres (4th, Sat).

Get smokin’ hot and tasty with Barbecue potluck power (8th, Wed).

Master 5 sauces, apply them to a million different dishes in Awesome sauces (11th, Sat).

Make beans and legumes a major part of a healthy diet in Bean cookery (18th, Sat). This class is especially good for the bean newbies out there. High in protein, fiber, and minerals, low in fat and cholesterol-free, there’s no excuse to not include them in your whole foods (plant-based) diet. Get rid of the meat, add in the beans, prevent heart disease, diabetes, and obesity easily.

More dessert love all around in Dessert mayhem 1.0 (22nd, Wed).

Last but not the least, Japan cuisine gets a veg-treatment in A taste of Japan (25th, Sat).

By the way, Makati, I’ll be hosting a green juice and smoothie workshop in your neck of the woods in February as well. Watch out!

In the kitchen: Dessert mayhem: Vice cream

When life hands you the knowledge to make vegan ice cream and cookies, you make ice cream sandwiches that’s so bad yet so good.

“Dessert mayhem: Vice cream” class was held on October 22nd, 2011 and class learned how to make dairy-free ice cream using plant-based ingredients that were naturally creamy. No refined sugar, too, I might add.

We played around with the flavor profiles, made some lower-fat versions, then bundled up said ice creams in glorious concoctions such as ice cream sundaes (with homemade fudge sauce and whipped cream), ice cream sandwiches (with chocolate chip cookies), and mochi. Just because we got rid of the dairy doesn’t mean we don’t like playing with our food.

January cooking classes

Now that we’ve all gotten nice and round after too much holiday merry-making, how about starting the year right with more mindful, healthful eating via veg cooking classes? It won’t be painful, I promise!

Learn how to make quick and easy dishes on the 11th (Wed). Add more creative salads to your food repertoire on the 14th (Sat). Get Italian-ated with DIY gnocchi on the 25th (Wed). And after a month of being good, treat yourself to decadent cupcakes on the 28th (Sat).
